I spent just about all day making dinner. While tasty, I think it would take a lot to make up for the time investment. (The recipe of course called for things like "thinly sliced bell pepper" and "cooked, shredded chicken"... right, because I have those prepped items onhand?) I made the chicken-fajita tostadas with a side of cilantro-lime rice. I also thought I'd be clever and turn the extra corn tortillas into chips, which was not a very good idea for me. Luckily, the smoke alarm didn't go off and the neighbors didn't call the fire department when smoke was pouring from my kitchen window. (Or is that a good thing?) Well... something to know: cutting this recipe in half (to serve 2) still resulted in too much food for me and Jonathan! But we did both get some veggies (Jonathan didn't even pick his out!), and the rice was easy and tasty.

I've also been getting pumped about this marathon idea! I think my favorite runner is John "The Penguin" Bingham, who does a column in Runner's World called "No Need for Speed" and talks about running for fun/personal achievement more than finishing first. Actually, I think he finished dead last in the first race he ran. But he's inspired a whole group of "Penguins" and written books including The Courage to Start and Marathoning for Mortals. I will read those soon. I'm also hoping to find some experienced runners (who know good long-run routes and such) at the Carolina Godiva Track Club, which starts official OBX Marathon training groups in August. This will be a good thing if they have some slower runners in the mix! So, if you're still thinking about it, you have some time. But the idea of a "Team Bartel" at the marathon is pretty exciting!
