For certain universities and large academic testing organizations which shall remain nameless, it is exceedingly difficult to understand that a person can have one name and then get married and have another name. This confusion leads to problems when such institutions say that application materials have not been received when, in fact, they have. Basically, this all means that I spent most of yesterday calling the registrar at K-State, the never-ending computerized menus of the ETS (the people who govern the GRE), and two of my potential programs in an effort to explain that yes, you really do have my GRE scores and my transcripts. You just have them filed under my previous name. In the end, one school understood and my application there is now magically complete.
Jonathan and I decided that this weekend would be "Christmas Shopping Weekend." It was important to plan it like this so that I could remind him and build up his patience. We even talked about going to The Legends in Kansas City to find the perfect gifts, until we started looking on the internet last night and ended up finishing the Christmas shopping in the span of about 30 minutes. I suppose the internet is nice and it certainly spared Jonathan the torture of my indecisiveness, but some of the fun was lost. And so today we're going to hunt, in vivo, for stocking stuffers. And we might make some muffins. And we might also make the following recipe, which is one of my favorite things in the whole wide world:
Asian Cole Slaw
1 med pkg coleslaw mix
1 med pkg shredded red cabbage
1 bunch green onions, chopped
1 pkg oriental flavor ramen noodles
1/2 cup sunflower kernels
1/4 cup red wine vinegar
1/2 cup sugar
1/4 cup vegetable oil
1/2 cup slivered almonds
Mix coleslaw mix, cabbage, green onions, and ramen noodles (broken up - uncooked). Take the flavor packet that came in the noodles and mix with the sugar, vinegar, and oil. Pour over the coleslaw mix and refrigerate for at least 2 hours after you have blended the ingredients well. Just before serving, add the almonds and sunflower kernels. If desired, you can toast these before serving.
Delicious!
